Foodspiration: Thai Sweet Chili Chicken Pizza

One of my top cravings: Asian cuisine. Whether it’s stir fry, Chinese food, Thai, etc. this girl can usually eat it any day, all-day. Therefore when I had myself some leftover grilled chicken I remembered back to a pizza place I visited on my ski trip in Des Moines, IA, and got some “foodspiration” from their Thai Kwon Dough pie I tried, to make a Thai Sweet Chili Chicken Pizza.

I am a strong believer in making dishes with what you have. Usually I don’t rush out and purchase special ingredients for a certain dish that I will never use again. I try not to be wasteful and throw my grocery money down the garbage disposal. So I drew inspiration from searching for recipes online and then adjusting them according to the ingredients I had in my own kitchen. (The only thing I went out and purchased was the pizza crust, because I was out of it at home, and cilantro — which I usually never buy but knew that I could make Pico De Gallo with it in the next week.)

The “Taste of Asia” sweet chili sauce that I used and purchase at my local grocery store.

  • sliced red pepper= a staple in my vegetable drawer
  • shaved carrots= usually have on hand for salads
  • white onion= I had a portion leftover from a meal earlier in the week
  • grilled chicken= typically make extra when I make it for dinner to use throughout the week
  • sweet chili sauce= I use this in stir fry and sometimes as a marinade
  • cheese= mozzarella, provolone or Parmesan — whatever you have (I did a combination of all three)
  • fresh cilantro= purchased for recipe and to make Pico De Gallo later (some recipes called for basil)
  • pizza crust= I usually use pre-made pizza crusts because they are easy, but you can make your own or use a mix — which is sometimes cheaper
Thai Sweet Chili Chicken Pizza

I constructed my Thai Sweet Chili Chicken Pizza on a pizza stone.


  • Preheat oven according to pizza crust directions, typically 450 degrees
  • cut up red pepper, onion and grilled chicken
  • spread a dollop of sweet chili sauce on crust
  • sprinkle carrots, red pepper, onion, chicken and cheese
  • bake 5-10 minutes, until cheese is melted or crust is golden brown
  • top with cilantro and enjoy!
